From reading the diesel supplement, it looks like the 5.0 Cummins likes 42 cetane rated fuel. From looking around where I live, it looks like I only 40 cetane available and will probably supplement each fuel up with an additive. Not sure if anyone else does this or have access to better rated fuel.

Well the fuel will change a lot from every station to every time you fill up even if it's at the same location.
All fuels will deteriorate, there octain and cetain ratings overtime will fall. Just one of those things.
Gas will spoil faster than diesel.

But it's not the end of the world that your not at the "listed" number. You most likely are filling your truck with fuels that are 40 -44.
Only thing you will see is just a slight loss in torque and power but the only way you will see it is on a dyno.
