Just wondering when it's time to fill up the DEF. Are y'all running Nissan DEF or just generic?

Any blue def. Pretty much. You can see specs in your owners manual.
Pay attention to shelf life.

2.75 per gallon at the Pilot truck stop pump,,,,
diesel itself was 2.59, so I went down to the Kroger, and paid 2.36

Saw 2, 2.5 gallon jugs of DEF as TSC for 22.00, seems a little steep to me

My local TSC has DEF in 2.5 gallon jug for $7.99. TerraCair brand.
